Love or hate ? This is a simple recipe and results in a mild flavoured, crisp product which keeps for weeks (or months ??)

Safety first:

1Kg Red onions

Pickling liquid
400ml Water​
300ml Cheap White Vinegar​
100g Sugar​
30g Salt​
20 Juniper berries (bruised)​

Prepare the onions:
Slice onions​
Pour over a kettle of boiled water, then strain​
(removes some rawness and bitterness)​

Make the Pickling liquid
Put the other ingredients in a pan and bring to the boil​
Stir to dissolve​
Allow to cool​

Push the onion rings into jars
Make a tight fit
Top up the jars with cooled pickling liquid and juniper berries

Ideally they should sit for 2 days, but can be eaten after 2 hours if you like

You can do this with any vegetable you fancy:
Carrot ribbons
Zucchini spirals
etc

Nice, are the juniper berries for flavor or a part of the preservation process?
Been meaning to try some food preservation and was gonna start with Sauerkraut which I've never tried but is apparently the easiest place to start with fermenting.
Think I might try a small jar of pickling too!

The juniper is a traditional flavouring, you could add what you like.
Sauerkraut is great, but this is a much quicker recipe. You can make it in the morning and eat in in the afternoon ... although sauerkraut is fremented and these onions aren't.
